Spicy Cauliflower Nachos Delight

1.Preheat your oven to 425°F (220°C).

2.In a large bowl, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

3.Dip each cauliflower floret into the flour mixture, then into the hot sauce, and finally coat it with breadcrumbs.

4.Place the coated cauliflower florets on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

5.While the cauliflower is baking, prepare your nachos. On a large baking dish, spread out a layer of tortilla chips.

6.Once the cauliflower is done, remove it from the oven and distribute it evenly over the tortilla chips.

7.Sprinkle the shredded cheddar cheese on top of the cauliflower and nachos, followed by black beans, corn, diced tomatoes, and sliced jalapeños.

8.Return the loaded nachos to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

9.Remove from the oven and drizzle with sour cream and garnish with chopped cilantro before serving.
