Hidden Veggie Rainbow Reveal

1.Prepare all vegetables by washing, peeling, and chopping them into small pieces for easier cooking.

2.In a large pot, bring water to a boil and add the chopped carrots and beets. Cook for about 10 minutes until tender, then drain and set aside.

3.In the same pot, add the zucchini, broccoli, cauliflower, corn, and peas. Cook for another 5-7 minutes until all vegetables are tender. Drain and set aside.

5.Next, puree the remaining vegetables (zucchini, broccoli, cauliflower, corn, and peas) in the blender until smooth, adding olive oil, salt, and pepper to taste. Transfer to another bowl.

6.To assemble the rainbow reveal, use a large platter or a painter's palette-shaped dish. Spoon the vibrant carrot and beet puree on one side, creating a colorful base. On the other side, spoon the green vegetable puree, creating a contrast in colors.

7.Using a spatula or the back of a spoon, create swirls or waves in the purees to mimic a painter's palette. You can also create small dots or dabs of the purees to resemble paint blobs.

8.Garnish the dish with fresh herbs scattered around the purees for added color and freshness. If desired, serve with a dollop of plain yogurt on the side for creaminess.
