Sweet Honey Milk Buns

1.In a small bowl, combine the warm water, warm milk (60ml), and 2 tablespoons of honey. Sprinkle the active dry yeast over the liquid and stir gently. Let it sit for 5-10 minutes until frothy and activated.

2.In a large mixing bowl, whisk together the flour and salt.

3.Add the softened butter, egg, and the activated yeast mixture to the flour mixture. Stir until a rough dough forms.

4.Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6-7 minutes on medium speed.

5.Gently knead in the raisins until evenly distributed throughout the dough.

6.Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.

7.After the dough has risen, punch it down gently to release air. Turn it out onto a floured surface and divide it into 12 equal portions (about 70g each).

8.Shape each portion into a smooth ball by tucking the edges underneath and rolling it gently on the surface.

9.Place the shaped buns on a baking tray lined with parchment paper, spaced about 2 inches apart.

10.Cover the buns loosely with a kitchen towel and let them proof for another 30-40 minutes until puffy and nearly doubled in size.

11.Preheat the oven to 350°F (175°C).

12.Before baking, brush the tops of the buns lightly with the remaining 2 tablespoons of honey diluted with 1 tablespoon warm water to give a shiny, sweet glaze.

13.Bake the buns in the preheated oven for 15-18 minutes, or until golden brown on top and cooked through.

14.Remove the buns from the oven and immediately brush them with the melted butter for a soft, glossy finish.

15.Allow the buns to cool on a wire rack for at least 15 minutes before serving to enjoy their full flavor and texture.
