Friendly’s Tomato-Garlic Pizza Sauce

1.Prepare the tomatoes: Bring a pot of water to a boil. Score a small 'X' on the bottom of each tomato. Blanch tomatoes for 30 seconds, then transfer to ice water. Peel off skins, then dice the tomatoes, discarding cores.

2.Heat olive oil in a medium saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant but not browned.

3.Add diced tomatoes, salt, pepper, and paprika to the pan. Stir to combine. If using, add tomato paste and sugar at this stage.

4.Bring the mixture to a simmer. Reduce heat to low and cook uncovered for 25-30 minutes, stirring occasionally, until sauce thickens and flavors meld. Use a wooden spoon to gently crush tomatoes as they cook.

5.For a smooth sauce, use an immersion blender or transfer to a blender and puree to desired consistency. For a rustic texture, leave it chunky.

6.Taste and adjust seasoning as needed. Remove from heat and let cool slightly before using on pizza.

7.If desired, stir in fresh basil just before using or sprinkle on top as garnish.
