Spicy Grilled Chicken Tacos

1.Prepare the chicken: In a medium bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Add the chicken and toss to coat evenly. Let it marinate for at least 15 minutes at room temperature, or up to 4 hours in the refrigerator.

2.Preheat your grill to medium-high heat (around 200-230°C). Clean and lightly oil the grill grates.

3.Grill the chicken: Place the marinated chicken on the preheated grill. Cook for 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 74°C (165°F).

4.Rest and dice the chicken: Once cooked, remove the chicken from the grill and let it rest on a cutting board for 5-10 minutes. This allows the juices to redistribute, making the chicken more tender. Then, dice the chicken into small, bite-sized pieces.

5.Warm the tortillas: While the chicken rests, warm the tortillas. You can do this by briefly heating them on the grill, in a dry skillet over medium heat, or wrapped in a damp paper towel in the microwave.

6.Assemble the tacos: Fill each warm tortilla with a generous portion of the diced spicy grilled chicken. Top with shredded lettuce, diced tomatoes, chopped red onion, cilantro, and crumbled cheese.

7.Serve immediately with lime wedges on the side and your favorite salsa or hot sauce, if desired.
