Tropical Pineapple Pork Stir-Fry with Sweet Soy Glaze

1.In a medium bowl, toss the pork strips with 1 tbsp soy sauce, 1 tsp cornstarch, and 1 tsp sesame oil. Set aside to marinate for at least 10 minutes.

2.In a small bowl, whisk together the sweet soy sauce, reserved pineapple juice, rice vinegar, brown sugar, and chicken broth. Set the cornstarch slurry aside.

3.Heat the vegetable oil in a large wok or skillet over medium-high heat until shimmering.

4.Add the marinated pork strips and stir-fry quickly until they are browned and cooked through, about 3-4 minutes. Remove the pork from the wok and set aside.

5.Add the sliced onion and red bell pepper to the hot wok. Stir-fry for 2 minutes until slightly softened but still crisp.

6.Add the minced garlic, grated ginger, and corn kernels to the wok. Stir-fry for 1 minute until fragrant.

7.Return the cooked pork to the wok. Add the drained crushed pineapple.

8.Pour the prepared sauce mixture over the pork and vegetables. Bring the mixture to a simmer.

9.Stir the cornstarch slurry once more and pour it slowly into the simmering sauce while stirring constantly. Cook for 1 minute until the sauce thickens to a glossy glaze.
