Spicy Red Cabbage Slaw with Peanut Dressing

1.Prepare the Slaw Ingredients: Thinly slice or shred the red cabbage. You can use a mandoline for very thin slices. Julienne or grate the carrots. Chop the fresh cilantro and thinly slice the green onions.

2.Combine Slaw Ingredients: In a large mixing bowl, combine the shredded red cabbage, julienned carrots, chopped cilantro, and sliced green onions. Toss gently to mix.

3.Prepare the Peanut Dressing: In a separate medium bowl, whisk together the peanut butter, lime juice, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, sriracha (or chili garlic sauce), minced garlic, and grated ginger until smooth.
