No-Prebake Puff Pastry Quiche Lorraine

1Preheat your oven to 375°F (190°C). Place a heavy baking sheet or pizza stone on the center rack of the oven to preheat; this is essential for conducting direct heat to the bottom of the pastry while the custard sets.

2Prepare your 8x8 inch square baking pans by lightly greasing them. Ease the thawed puff pastry sheets into the pans, pressing firmly into the corners and up the sides. Trim any excess pastry flush with the rim. Chill the prepared, raw crusts in the refrigerator for 15 minutes to firm up the pastry fat before filling.

3Place the bacon lardons in a cold skillet over medium heat. Fry for 8-10 minutes, stirring occasionally, until deeply golden and crispy. Drain thoroughly and gently blot with paper towels; removing all excess fat is vital to prevent a soggy crust.

4In a large mixing bowl, gently whisk the eggs (6 large), heavy cream, milk, nutmeg, salt, and pepper until combined. Do not whisk vigorously, as excess air can cause the custard to crack.

5Assemble the quiches: Sprinkle half of the grated Gruyère directly onto the bottom of the raw pastry shells; this creates a buffer layer to protect the crust from moisture. Distribute the crispy lardons evenly over the cheese, then top with the remaining Gruyère.

6Carefully pour the egg and cream mixture over the fillings, filling until reaches about 1/4 inch below the top edge of the pastry.

7Place the pans directly onto the preheated baking sheet inside the oven. Bake at 375°F (190°C) for 35-45 minutes. The quiches are done when the edges are puffed and golden, the custard is set, and there is only a very faint wobble in the center when the tray is gently tapped.

8Remove from the oven and allow the quiches to rest on a wire rack for at least 20 minutes. This rest period is critical for the custard to firm up and for the pastry layers to settle. Garnish with fresh chives (1 tablespoon) before slicing.
