Classic Egg Drop Soup

1In a medium saucepan, combine the vegetable broth, grated ginger, white pepper, salt, and turmeric. Bring the mixture to a boil over medium-high heat, then reduce to a simmer for 5 minutes to allow the ginger to infuse.

2In a small bowl, whisk the eggs (3 large) thoroughly until the whites and yolks are completely integrated with no visible streaks; this is essential for creating uniform, delicate ribbons rather than chunky pieces.

3Prepare a slurry by mixing the cornstarch and cold water in a small ramekin until smooth. Slowly pour the slurry into the simmering broth while whisking constantly. Continue to simmer for 1-2 minutes until the broth thickens slightly and turns from cloudy to clear.

4Reduce the heat to low so the liquid is barely simmering. Using a large spoon, stir the broth in a circular motion to create a gentle whirlpool effect.
