Spiced Apple Cider Glaze

1.In a small, heavy-bottomed saucepan, combine the apple cider, maple syrup, cinnamon stick (1), whole cloves (2), orange zest, and salt.

2.Place the saucepan over medium-high heat and bring the mixture to a rapid boil. The goal is to evaporate the water content quickly to concentrate the apple flavor.

3.Once boiling, reduce the heat to medium-low to maintain a steady, vigorous simmer. Do not cover the pan, as this will trap steam and prevent reduction.

4.Simmer for approximately 10 to 12 minutes, swirling the pan occasionally to prevent scorching. Watch closely as the liquid reduces; it is ready when it has thickened into a syrupy consistency that coats the back of a metal spoon and has reduced to about 1/3 cup (80 ml) in volume.

5.Remove the saucepan from the heat immediately. Fish out and discard the cinnamon stick (1), cloves, and orange zest strip.

6.Allow the glaze to cool for 5 minutes in the pan before transferring to a glass jar or serving vessel. The glaze will thicken further as it cools to room temperature.
