Artichoke Guacamole

Guacamole In a medium bowl, mash the avocados with a fork until smooth.

Guacamole Add the chopped red onion, chopped cilantro, minced jalapeno, minced garlic, lime juice, and salt and pepper to the mashed avocados. Mix well.

Artichoke mix In a separate bowl, combine the chopped artichoke hearts, diced tomatoes, diced red bell pepper, diced green bell pepper, diced red onion, chopped cilantro, lemon juice, olive oil, salt, and pepper. Mix well.

Final assembly Gently fold the artichoke mix into the guacamole until well combined.

Final assembly Serve immediately with tortilla chips or as a topping for tacos, nachos, or sandwiches.
