Herring and Chocolate Delight

Herring Marinade In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, minced garlic, salt, and pepper to create the herring marinade.

Marinating the Herring Place the herring fillets in a shallow dish and pour the marinade over them. Gently toss to coat the herring fillets. Cover and refrigerate for at least 1 hour or overnight to marinate.

Preparing the Herring Preheat the oven to 375°F (190°C). Remove the herring fillets from the marinade, allowing any excess marinade to drip off. Place the herring fillets on a baking sheet lined with parchment paper.

Cooking the Herring Bake the herring fillets in the preheated oven for 10-12 minutes or until cooked through. Remove from the oven and set aside.

Preparing the Chocolate Sauce In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and add the chopped dark chocolate. Let it sit for a minute to melt. Stir until smooth. Add the butter and stir until melted and well combined.

Garnishing and Serving To serve, drizzle the warm chocolate sauce over the cooked herring fillets. Garnish with fresh dill sprigs and a dusting of cocoa powder.
