Roasted Pork with Tomato Sauce

Preheat the Oven Preheat the oven to 180°C (350°F).

Prepare the Spice Rub In a small bowl, combine the minced garlic, olive oil, salt, black pepper, paprika, dried thyme, and dried rosemary to make a spice rub.

Season the Pork Shoulder Rub the spice mixture all over the pork shoulder, making sure to coat it evenly.

Roast the Pork Shoulder Place the seasoned pork shoulder on a roasting pan or baking dish and roast in the preheated oven for about 2-3 hours, or until the internal temperature reaches 75°C (165°F).

Prepare the Tomato Sauce While the pork is roasting, prepare the tomato sauce. In a large saucepan, melt the butter over medium heat.

Cook the Onion and Garlic Add the chopped onion and minced garlic to the saucepan. Cook until the onion is translucent and the garlic is fragrant.

Add the Tomato Sauce Ingredients Add the diced tomatoes, tomato paste, sugar, salt, black pepper, dried basil, and dried oregano to the saucepan. Stir to combine.

Simmer the Tomato Sauce Simmer the tomato sauce for about 20-30 minutes, or until it thickens slightly.

Slice the Roasted Pork Once the pork is cooked, remove it from the oven and let it rest for 10-15 minutes. Then, slice it into thick slices.

Serve and Enjoy Serve the sliced roasted pork with the tomato sauce and garnish with fresh chopped parsley.
