Cottage Cheese Banana Tea Cake

Preparation Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan.

Cake Batter In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cake Batter In a large bowl, cream together the cottage cheese, sour cream, butter, and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the mashed bananas and brewed tea.

Cake Batter Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Assembling Pour the batter into the prepared cake pan.

Topping In a small bowl, mix together the granulated sugar and ground cinnamon. Sprinkle the mixture over the top of the cake batter.

Baking Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Cooling Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely before serving.
