Roasted Lemon Garlic Chicken

1.Preheat the oven to 425°F (220°C).

2.Rinse the whole chicken under cold water and pat it dry with paper towels.

3.In a small bowl, combine the minced garlic, olive oil, salt, black pepper, dried thyme, and dried rosemary to make the chicken marinade.

4.Rub the marinade all over the chicken, including under the skin.

5.Squeeze the juice of 2 lemons all over the chicken and stuff the squeezed lemon halves into the cavity of the chicken.

6.Tie the chicken legs together with kitchen twine.

7.Place the chicken on a roasting rack set in a roasting pan.

8.Arrange the fresh rosemary sprigs, thyme sprigs, lemon slices, and whole garlic cloves around the chicken.

9.Drizzle the chicken and the ingredients in the roasting pan with olive oil.

10.Season with salt and pepper to taste.

11.Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).

12.Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

13.Serve the roasted lemon garlic chicken with the pan juices and your favorite side dishes.
