Marinade In a bowl, combine the soy sauce, olive oil, honey, smoked paprika, garlic powder, chili powder, salt, and pepper. Mix well to make the marinade.

Marinating the Chicken Place the chicken breasts in a ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 1 hour, or overnight for best results.

Cooking the Vegetables Heat olive oil in a large skillet over medium heat. Add the sliced onion, bell peppers, and minced garlic. Cook until the vegetables are soft and fragrant, about 5 minutes.

Cooking the Chicken Push the vegetables to one side of the skillet and add the chicken breasts. Cook for 6-8 minutes on each side, or until the chicken is cooked through and no longer pink in the center.

Seasoning Sprinkle the dried oregano, dried basil, and dried thyme over the chicken and vegetables. Stir to combine.

Simmering Add the diced tomatoes and chicken broth to the skillet. Bring to a simmer and let it cook for 10-15 minutes, or until the flavors meld together and the sauce thickens slightly.

Final Touches Season with salt and pepper to taste. Garnish with fresh parsley before serving.
