Gosha Recipe

Prepare the dough In a large mixing bowl, combine the flour and salt. Gradually add water while mixing until a dough forms.

Rest the dough Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic. Divide the dough into 8 equal portions and shape each portion into a ball. Cover the dough balls with a damp cloth and let them rest for 30 minutes.

Cook the filling In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

Season the filling Add the ground beef to the skillet and cook until browned. Stir in the cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat and let the filling cool.

Preheat the oven Preheat the oven to 180°C (350°F).

Assemble the goshas On a lightly floured surface, roll out each dough ball into a 20cm (8-inch) circle. Place a spoonful of the filling onto one half of each dough circle, leaving a border around the edges.

Seal the goshas Fold the other half of the dough over the filling and press the edges to seal. Use a fork to crimp the edges for a decorative finish.

Bake the goshas Place the goshas on a baking sheet and brush the tops with a little vegetable oil. Bake in the preheated oven for 25-30 minutes, or until golden brown.

Make the yogurt sauce In a small bowl, mix together the plain yogurt, fresh lemon juice, and chopped fresh parsley. Serve the goshas hot with the yogurt sauce on the side.
