Sour Cream and Green Peas Rice

1.Cook the rice according to package instructions with salt.

2.In a small bowl, whisk together the sour cream, tomato paste, flour, salt, and black pepper until smooth. Set aside.

3.Heat the vegetable oil in a large skillet over medium heat.

4.Add the diced potatoes and cook until slightly browned and crispy, about 5 minutes.

5.Add the frozen green peas, paprika, garlic powder, onion powder, and dried thyme to the skillet. Cook for an additional 3-4 minutes, until the peas are heated through.

6.Reduce the heat to low and pour the sour cream sauce over the vegetables. Stir gently to combine.

7.Simmer for 2-3 minutes, until the sauce is heated and thickened.

8.Serve the creamy rice with the sour cream and green pea sauce on top.
