Savory Carrot Fritters

1.Combine grated carrots, chopped onion, flour, cornstarch, baking powder, cumin, paprika, salt, and black pepper in a bowl. Mix well.

2.In a separate bowl, whisk together the beaten eggs and chopped parsley.

3.Add the egg mixture to the carrot mixture and stir until everything is well combined.

4.Heat oil in a frying pan over medium heat.

5.Scoop spoonfuls of the carrot batter into the hot oil, flattening them slightly with the back of the spoon.

6.Fry the fritters for 3-4 minutes on each side or until golden brown and crispy.

7.Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
