Classic German Sausage Platter

1.Preheat a grill or grill pan over medium heat for the bratwurst sausages.

2.Lightly brush the bratwurst sausages with vegetable oil to prevent sticking.

4.While the bratwurst is grilling, prepare the Weisswurst by bringing 1 cup of water to a gentle simmer in a medium saucepan. Do not boil.

5.Add the Weisswurst sausages to the simmering water and poach for 10-12 minutes until heated through. Avoid boiling to prevent casing from bursting.

6.In a small saucepan, melt the butter over medium heat. Add the drained sauerkraut and caraway seeds, if using. Cook, stirring occasionally, for 5-7 minutes until heated through and slightly softened. Season with salt and pepper to taste.

7.Warm the pretzel rolls or crusty German bread in the oven at 350°F (175°C) for 5 minutes or until just heated through.

8.Arrange the grilled bratwurst and poached Weisswurst on a large serving platter.

9.Place the warmed sauerkraut in a bowl alongside the sausages.

10.Add small bowls of Bavarian sweet mustard and spicy mustard to the platter for dipping.

11.Slice the pretzel rolls or bread and arrange them around the sausages and sauerkraut.

12.Garnish the platter with fresh parsley leaves for a pop of color.
