Into a pot add in the chicken breast, 1 teaspoon of salt, 2 teaspoons oregano, 2 teaspoons basil, 6 tablespoons chopped culantro, 1 teaspoon black pepper, 1 teaspoon minced garlic and 1 teaspoon minced ginger. Add in 4 and 1/2 cups water to the pot, lid on and let it boil for 10 - 15 minutes.
Once boiled, take out the chicken from the pot and dismantle the chicken breast into small chunks as you take out the bones.
Into a different pot add in achiote oil ( it gives the Arroz con pollo the nice colour), onions, celery, peppers, green beans, carrots.
Sauté the veggies for about 3 minutes then add in the chicken chunks. Mix everything together then add in your rice. ( remember to rinse your rice)
Into the mix you are going to add in the liquid that the chicken was first boiled in. Put the lid on and let the rice cook and once the rice simmers( all the liquid in the pot is gone away and you can only see the rice) lower the heat down, aluminium foil / banana leaves between the pot and the lid.
10 - 15 minutes with the low heat and you rice is ready. Add in green olives and mix everything together and your Arroz con pollo is ready to be served.
