Butterfly Pea Vodka Lemonade

1.In a small saucepan, bring 2 cups of water to a boil.

2.Once boiling, remove from heat and add the dried butterfly pea flowers. Let steep for 10 minutes to extract the color.

3.Strain the butterfly pea flower infusion into a pitcher, discarding the flowers, and allow it to cool to room temperature.

4.In the pitcher, add the fresh lemon juice and simple syrup, stirring well to combine. The mixture will turn from blue to a beautiful purple as you mix.

5.Add the vodka to the pitcher and stir gently to combine all the ingredients.

6.Fill glasses with ice cubes and pour the butterfly pea vodka lemonade over the ice.

7.Garnish each glass with a slice of lemon and a few fresh mint leaves for an added touch of freshness.
