BBQ Chicken & Pineapple Paradise Pizza

Prepare the Dough

1.1. In a large mixing bowl, combine the flour, instant dry yeast, sugar, and salt. Mix well.

2.2. Add the warm water and olive oil to the dry ingredients. Stir with a wooden spoon until a shaggy dough forms.

3.3. Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.

4.4. Lightly oil a clean bowl and place the dough inside, turning once to coat with oil. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for 30-40 minutes, or until doubled in size.

Prepare the Smoky BBQ Tomato Sauce

1.5. While the dough rises, combine crushed tomatoes, tomato paste, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper in a small saucepan.

2.6. Bring the sauce to a simmer over medium heat, stirring occasionally. Reduce heat to low and let it cook gently for 10-12 minutes until slightly thickened. Adjust seasoning to taste. Remove from heat and set aside.

Grill the Chicken

1.7. Preheat a grill pan or outdoor grill to medium-high heat.

2.8. Season the chicken breast with salt and pepper and a light drizzle of olive oil.

3.9. Grill the chicken for 5-6 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing into thin strips.

Assemble the Pizza

1.10. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat as well.

2.11. Punch down the risen dough and transfer it to a floured surface. Roll or stretch the dough into a 12-inch circle, about ¼ inch thick.

3.12. Transfer the dough to a parchment-lined baking sheet or a pizza peel dusted with flour or cornmeal.

4.13. Lightly brush the dough edges with olive oil to promote browning.

5.14. Spread an even layer of the smoky BBQ tomato sauce over the dough, leaving a ½-inch border around the edges.

6.15. Sprinkle the shredded mozzarella cheese evenly over the sauce.

7.16. Distribute the grilled chicken slices, pineapple chunks, and thinly sliced red onions evenly over the cheese.

Bake and Finish

1.17. Bake the pizza in the preheated oven (or on the pizza stone) for 12-15 minutes, or until the crust is golden and crisp, and the cheese is melted and bubbly.

2.18. Remove the pizza from the oven and let it cool for 2-3 minutes.

3.19. Garnish with chopped fresh cilantro if desired, slice, and serve immediately.
