Cottage Cheese Sugar Cookies with a Zesty Lemon Twist

1Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2In a large mixing bowl, combine the cottage cheese (1 cup), granulated sugar (1 cup), and softened butter. Mix until smooth and creamy.

3Add the egg (1 large) and vanilla extract (1 teaspoon) to the mixture, and beat until well combined.

4In a separate bowl, whisk together the all-purpose flour (2 cups), baking powder (1 teaspoon), baking soda (½ teaspoon), and salt (¼ teaspoon).

5Gradually add the dry ingredients to the wet mixture, stirring until just combined.

6Fold in the lemon zest (1 tablespoon) and lemon juice (½ teaspoon) to add a refreshing twist to the dough.

7Using a tablespoon, scoop out portions of the dough and roll them into balls. Place them on the prepared baking sheet, leaving space between each cookie as they will spread while baking.

8Flatten each cookie slightly with the bottom of a glass or your hand to create a nice shape.

9Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

10Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
