Rainbow Sugar Cookie Stars

1.In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

2.In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.

3.Beat in the egg and vanilla extract until well combined.

4.Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

5.Divide the dough into 2-3 portions. Flatten each portion into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

6.Preheat your oven to 190°C (375°F). Line baking sheets with parchment paper.

7.On a lightly floured surface, roll out one disc of dough to about 1/4-inch thickness.

8.Using star-shaped cookie cutters, cut out shapes from the dough. Place the cookies on the prepared baking sheets, about 1 inch apart.

9.Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

10.While the cookies cool, prepare the glaze. In a medium bowl, whisk together the powdered sugar, 2 tablespoons of milk or water, and 1/2 teaspoon of vanilla extract until smooth. Add more milk or water, a teaspoon at a time, if needed to reach a pourable consistency.

11.Divide the glaze into small bowls and stir in different food colorings to achieve desired rainbow colors.

12.Once the cookies are completely cool, dip the tops into the colored glazes or spread the glaze using a knife or spatula. Decorate with sprinkles if desired.

13.Let the glazed cookies dry completely on a wire rack before serving or storing.
