Creamy Avocado and Tomato Delight

1Start by preparing the ingredients. Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Dice the tomatoes (2 medium) and set aside.

2In a small saucepan, melt the butter (2 tablespoons) over medium heat. Add the minced garlic (3 cloves) and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

3Add the diced tomatoes (2 medium) to the saucepan and cook for another 2-3 minutes until they soften slightly. Remove from heat and let it cool for a few minutes.

4Mash the avocado in the mixing bowl until smooth. Stir in the sautéed tomato and garlic (3 cloves) mixture, along with the lime juice, chopped spring onions, (2) salt, and pepper. Mix until well combined.

5Taste and adjust seasoning if necessary. Serve immediately as a dip with tortilla chips or as a spread on toasted bread.
